Quick and Easy Recipes for November

Fall is officially here…Well, kind of for us San Diegans. It is November and my favorite time of year because everything Pumpkin is acceptable. Also, this time of year there are a ton of social events centered around food like work potlucks, Friendsgiving, etc. And if you are anything like me you leave everything to the last minute and find yourself running to your local grocery store to pick up something store bought.

But this year I refuse to be that person at the party who brings the store bought dish still in the grocery bag.

For the month of November, I am going to share with you quick and easy recipes that will have you feeling like you have made a homemade dish that will be the star of the party.


This week I am sharing my Semi-Homemade Pumpkin Spice Cupcakes that will have everyone running back for more.


Here is what you will need for the Cupcakes:

Cupcake Baking Cups

1 Box of Yellow Cake mix

1 Can of Libby’s 100% Pure Pumpkin

½ Cup of Milk

⅓ Cup of Vegetable Oil

4 Eggs

1 ½ Teaspoons of Pumpkin Pie Spice

1 Splash of Vanilla Extract

1 Container of Cream Cheese Frosting (if you don’t have time to make your own frosting)


  1. Preheat oven to 350 degrees or 325 degrees for dark or nonstick pan, place Cupcake Baking Cups in a regular size cupcake/muffin baking pan.
  2. In a large mixing bowl mix yellow cake mix, milk, pumpkin, oil, eggs, splash of vanilla extract and pumpkin pie spice. It is best to use an electric mixer on low speed for about 30 seconds, then on medium to high speed for about 2 minutes. Or you can mix by hand until mixture is smooth.
  3. Fill cupcake baking cups about ⅔ full of the mixture
  4. Bake for 19-24 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
  5. Let cupcake cool for about 30 minutes
  6. Frost cupcakes with canned frosting or homemade frosting (recipe below) and decorate to your liking.

If you are really feeling fancy, here is what you will need to make your own Whipped Cream-Cream Cheese Frosting *This is the way to go*

1 Package of Cream Cheese (8oz)

1 Cup of White Sugar

1 Pinch of Salt

1 Teaspoon of Vanilla Extract

1 ½ Cups of Heavy Whipping Cream


  1. In a medium mixing bowl beat heavy whipping cream until soft peaks form and set aside.
  2. In a medium to large mixing bowl mix cream cheese, salt, vanilla, and sugar until smooth, once smooth fold into heavy whipping cream.

I completely trust my husband, but I know now that I need to be right there with him knowing what’s going on and doing research with him when it comes to investing and preparing for our financial future. Lastly, I have learned that mindset is everything. I do not know how many times I have said this in my blog and vlogs, “MINDSET IS EVERYTHING”. As you know I am a huge believer in personal development and positive thinking, but I never really associated your mindset with your finances. But I have learned that finances and mindset go hand in hand  if you are looking to be successful in your finances as well as life and business.


Oh My Goodness! When I say I have learned so much and have been awakened to how important me as a women being in control of my finances is. I can’t even tell you how inspired I am to get it together. I met so many amazing women at this event and I have been inspired to start living in my passion.

Savvy San Diego Living: Brazilian Steakhouse Date for under $100

Is it possible to go to a Brazilian Steakhouse and spend less than $100.00 for 2 People?

The answer is YES!

If you are a savvy person like myself, you can treat yourself and husband and/or spouse to a fabulous Brazilian Steakhouse experience.

For the last couple of years my husband has been wanting to try a Brazilian steakhouse because he heard you get unlimited meat. As soon as he heard unlimited meat, that was it. He did not want to go to any other steakhouse until he had a chance to try a Brazilian steakhouse first.

So this year for his birthday I figured I would surprise him and take him to his first Brazilian steakhouse. After doing some research I quickly found out that going to a Brazilian steakhouse is a full on experience and for this “Experience” it was going to cost you. Mind you I had a strict budget that I did not want to exceed for his birthday weekend. I wasn’t going to spend half my budget on going to a steakhouse LOL.

Thank goodness I was flexible and creative. I did a lot of research and found the best Brazilian Steakhouse in San Diego.

First I knew that I wanted my husband to get the “FULL” Brazilian Steakhouse experience. And for myself, I am not an all you can eat type of girl. So I was hoping that they had another option for me.In doing my research I ended up making reservations at Fogo De Chao; not only was it ranked the best via Yelp, this Brazilian steakhouse is also in Brazil.

Because I made my reservation early I was able to get promotional emails from the restaurant. And when looking to save on anything the best thing to do is sign up for their mailing list. The first promotional email they sent me included a coupon for $15.00 off, and this coupon came in so handy in helping me save money. Once I received the coupon, I read that it was also good for lunch. Once I read that, I double checked the website to see what the cost of having lunch is verses dinner… and let me tell you I quickly changed this surprise from a dinner to a lunch experience (LUNCH $34.95 DINNER $52.95). Right there i already cut the cost about 35% and I still have a $15.00 off coupon.

The moral of going to a Brazilian Steakhouse for under $100 is…

First: Do your research

Second: Sign up for their mailing list

Third: It’s okay to have a lunch date

Now that we got the savings out of the way, let me tell you about our actual experience at Fogo De Chao.

So the day had finally arrived, I surprised my husband and pulled up at Fogo De Chao in Downtown San Diego. My husband was so excited. As soon as we walked through the door the hostess knew exactly who we were, and she sat us right away. We did not even have to wait 2 seconds. Once we were at our table it seemed like not even 30 seconds later one of the servers came over and somehow knew it was our first time there. She literally explained everything down to the cut of meats to us, and answered all of our questions and really took her time with us. I must say this was the best customer service experience that I have had in San Diego since moving to here in 2005. Not only did she explain everything, but I told her that I was not a big all-you-can eat person and she helped me find a middle ground as I did want the full experience of the Brazilian Steakhouse but not really (if that makes any sense).

After we knew what we were doing, we ordered our “adult beverages” and headed over to the most amazing salad bar ever. Once we had our first round of food from the salad bar, we headed back to our table and then the ballet of meats started. There were so many different meats going around and around, the meat cutters came by our table and cut meat on meat on meat for my husband. It was kind of an amazing experience and not to mention the food was absolutely delicious.

Once my husband couldn’t eat another bite, one of the servers came over gave my husband a dessert menu and said “Happy Birthday choose any dessert you want on us”.

After 2 full meals or “Experiences” , 2 “Adult Beverages”, dessert, Tip (a really good tip), and paying for valet parking, I only ended up spending a total of $91.00.

Again I have to say the food was AMAZING, the customer service was AMAZING, our whole experience was AMAZING! It was worth every penny. I can honestly say that we will be back for dinner and pay full price because it was so worth it. Okay just kidding, I will not be paying full price because… They sent me a $25.00 off coupon for my birthday, a $25.00 off coupon just because, and restaurant week in San Diego is coming up on September 25th ($40.00 per person) so I will not be paying full price anytime soon LOL!

If you are ever in San Diego you must give Fogo De Chao a try, you will not regret it. And don’t forget to sign up for their mailing list to get your coupon.

Top 5 Affirmations: For a Positive Mindset

Hey Guys,

I just wanted to share my Top 5 Affirmations for keeping your mindset positive.

I tend to gravitate towards these 5 the most when I am feeling in a funk or when I unconsciously allow others negativity to bring me down. The best way for me to snap out of it is to focus on one or more of the affirmations below to switch my mindset to a more positive place.

Why I Blog…

As I have gotten older, I noticed that I have become so shy and guarded when it comes to speaking my mind and being around people. I noticed in social settings that I would listen to conversations around me and want to jump in and be a part of the conversation, but was always to late. While the conversation was in full swing I would be having an internal conversation in my head basically analyzing the current conversation going on. I would be trying to figure out if what I had to say fit in the conversation or I would think that what I had to say people would think was “stupid”. So by the time I found the courage to speak up and get what I had to say out of my mouth, the conversation was over or moved on to the next subject. I really felt like I had to chose my words wisely and speak them in the appropriate time within  any conversation that I was in.

I started my blog back in July of 2014, well on July 22, 2014 to be exact.

I started my blog as a part of the “goals” that I set for myself in 2014;  and my major focus for that year was being vocal and allowing my voice to be heard, and the first major step I took was starting a blog. I read somewhere a long time ago that blogging can help you break out of your shell and learn to speak your mind with no fear or hesitation. Blogging has allowed me a personal platform for my voice, thoughts, idea’s, and feelings to be expressed in a “safe place”.

When I started blogging in my “safe place” it was solely a place for me to release and be creative. I did not realize how much I needed a place that allowed me to express not only my thoughts and feelings but my creativity as well. Starting this blog was such release for me and it is something that I truly enjoy, but *HUGE BUT* I slowly came to realize that other people were actually reading what I was posting. At first it freaked me out, but I started to receive some amazing feedback and inspiring emails from people that I didn’t even know. I even had one women reach out to me who was a real blogger (she actually has a career in blogging about things that she loves), and she let me know how much she enjoys reading my blog and invited me to be a part of an amazing community of other bloggers.

With the help of this women and other members of the blog community I started getting the courage to tell people that I “blog”. I really didn’t tell many people that I knew that I was a “blogger” in fear that they might judge me, not support me, etc. But if anyone asked, I let them know that I blog.

Lately; I have been going back and forth with myself in regards to taking the leap and fully sharing my blog with my friends, family, and the rest of the internet world, and maybe even turning it into something more.

I have come to the conclusion with the help of my husband and recent interaction with people that I see on a daily basis that I have allowed “FEAR” of being judged take my “safe place” away without realizing it. I was allowing fear of being judged and fear of negativity from others completely take over my space, which caused me to take a break from blogging all together for a few months. So how was I living a “FEARLESS” 2016 (my word for the year) if I had so much fear consumed around other people’s judgments, thoughts, and opinion of my words?

I have made the decision to not be fearful, I am taking the leap to be “FEARLESS” with my blog and my voice. I really want to keep this space a positive space filled with support, love, and gratitude.

What Qualities do you look for in a Friend?


As I am getting older; I find myself being extremely picky when it comes to finding friends who I actually call my friends, and who I allow to have the “Friend” title in my life. I have learned over the years that not everyone who you think is your friend is a “Real” friend. So at this point and time in my life, I do not allow anyone in my life that brings any kind of negativity. Sometimes when you are working on bettering yourself and trying to be in a positive place living a positive life, it is necessary to weed out anything or anyone in your life that is draining your positivity.

After being let down and disappointed by so many people that I thought were my “friends” or who I thought had my best interest at heart, has caused me to look at friendship differently than I have in the past. I have become completely guarded with my feelings, and I have built huge walls made of brick and titanium so that I can protect myself against everyone.

In the past I found myself being to open, giving, supportive, and loyal to friends who didn’t appreciate what I had to offer as a friend. I truly felt like so many people took full advantage of my friendship and really did not return the love that I had for them as my friends. I was that person in a friendship that when I felt completely comfortable, I would open myself up and I would do anything for those people that I called friends.

Today; it so sad to say that I currently do not have anyone in my life that I would call a “Friend”, don’t get me wrong I do have many acquaintances, just no one that I feel I can call a “True Friend”. I really do miss having a friend that I can talk to whenever, laugh with, hang out with, etc. I am always actively looking a “Real Friendship”; it just may take time for me to let down my walls with people that I meet. But if they are someone that I know that I can build a lifelong friendship with, then the walls will start to drop little by little and not as fast as they did in the past. Some of the qualities that I am looking for in a “Real Friend” are someone who…

  • Is Real, I have met enough fake people to know who is real and honest and who is not.
  • Is caring.
  • Is inspiring and enjoys life.
  • Has a positive attitude at least 80% of the time.
  • Can laugh.
  • Strives to do and be better.
  • Is trust worthy.
  • Is loyal.
  • Can have a cocktail or 2 or 3.
  • Is not judgmental of others
  • Has some of the same interests as me.

I know, I know, this may seem like somewhat of a long list. But this is the first time that I have actually sat down and thought about the qualities that I would like in a friend. All of the things that I am looking for in a friendship are qualities that I like to think that I offer in a friendship as well.

I believe that it is best to have quality in friends as opposed to the quantity of friends.
